Sausage & Spinach Soup: a Warming, Balancing Meal
1/28/15 — The sausage in this warm and nourishing soup gives it a hint of indulgence, while the rice helps fill you up. It is a well-balanced combination that tastes great too!
Sausage and Spinach Soup
1 lb. chicken or turkey sausage
8+ cups chicken broth
1 (6oz.) bag baby spinach, roughly chopped
1 (14.5 oz.) can diced tomatoes
1 cup brown basmati rice
1 tsp. Italian seasoning
Remove sausage from casing. In a skillet over medium heat, brown the sausage and break it up with a wooden spoon.
In a large pot, bring 8 cups of broth to a boil. Reduce heat to a simmer, and then add the sausage, spinach, diced tomatoes and Italian seasoning. Return the soup to a boil and add the rice. Reduce heat, cover and simmer for 30 minutes. Stir-in more broth as desired.
