Cracker Coated Cod
1 lb. cod
1 cup Ritz crackers, crushed
2 tbsp. butter, melted
¼ cup sun-dried tomatoes in oil
Preheat oven to 450F.
Combine the crushed crackers with the melted butter. Spoon the cracker mixture over the fish, on a foil-lined baking sheet.
Bake 12 minutes, and then spoon the sun-dried tomatoes over the fish.
