Brownies and Zucchini?!
9/3/15 — These brownies are a fan favorite. You barely notice the zucchini, but it adds a burst of nutrition and just the right amount of moisture.
- 2 cups flour, preferably white whole wheat
- 1 cup sugar, preferably coconut palm (but white sugar is fine)
- ¼ tsp salt
- 1½ tsp baking soda
- ⅓ cup cocoa powder
- ½ cup canola oil
- 2 tsp vanilla extract
- 2 eggs, beaten
- 2 cups grated zucchini (unpeeled)
- ½ cup chocolate chips
Preheat oven to 350F.
In a large bowl, combine the flour through cocoa powder and gently stir. Separately combine the oil, vanilla and eggs, and stir well. Slowly stir the wet ingredients into the dry mixture. Add the zucchini and chocolate chips and stir until just combined.
Bake in a greased 9×13 pan for 20-25 minutes.
