Beautifully Roasted Asparagus

5/28/14 — This healthy side dish will light up your taste-buds, and your plate!  Pretty green asparagus spears are linked with reducing water retention [translation: they help prevent bloating].  This is a feel good food all the way around!

Beautifully Roasted Asparagus

  • 1 bunch asparagus
  • 1 tbsp. extra light olive oil
  • ½ tsp dried tarragon
  • Salt and pepper
  • ½ pint cherry or grape tomatoes, chopped

Preheat oven to 425F.

On a baking pan, mix all the ingredients except the tomatoes. Roast for 6 minutes. Stir and add the tomatoes to the pan. Roast for 4-6 minutes more.
