AWESOME Orzo Side Dish (hello summer cookouts!)
5/21/14 — This delicious side dish expertly combines rich and healthy ingredients. It’s bold and full of flavor–a fabulous recipe for any time of year, and especially for summer cookouts!
- 1½ cup orzo, ideally whole wheat
- ½ pint cherry or grape tomatoes, chopped
- 6 tbsp. olive oil
- ¼ cup balsamic
- ¼ cup capers
- 1 cup lettuce, finely chopped
- 1/3 cup pine nuts, toasted
- ½ cup fresh basil
- ½ cup Parmesan
- 2 cloves garlic, minced
Cook the orzo according to instructions on the package. After draining out the water, place it in a large bowl and add the tomatoes, olive oil and vinegar. Let the mixture cool.
Add the remaining ingredients. Season with salt and pepper and add extra oil as needed. Serve room temperature.
