Homemade Spinach & Artichoke Hummus

4/2/14 — This beautiful hummus is deliciously creamy and invigorating. It is a feel good snack or side dish, and it’s ready in ten minutes or less!

Spinach Artichoke Hummus

  • 1 can of chickpeas, drain (but save ¼ cup of the liquid)
  • 2 tbsp tahini
  • Juice of 1 lemon
  • 1 tsp salt
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic
  • 1 cup fresh spinach, chopped
  • 8 oz. artichokes, rinsed

Strain and rinse the chickpeas (but reserve ¼ cup of the liquid and set it aside – if you forget, use ¼ cup of water instead).  In a food processor, blend the chickpeas through garlic for about 2 minutes, until the mixture is smooth and creamy.

Add the spinach and artichokes and pulse briefly again (20-30 seconds).

Serve with pita bread, veggies, or on the side with any Mediterranean dish!
