Spinach & White Bean Salad, Feel Peaceful
12/12/13 — It’s simple, super healthy, and calming on the mind and body! Spinach is packed with iron, an energy-boosting mineral, and the beans are loaded with nutritional perks like fiber, which helps you feel full. The other key ingredients (hello onion and garlic) are natural cleansers. In all, this is a dish that won’t burden your system, but it will taste great!
Spinach & White Bean Salad
2 tbsp. extra virgin olive oil
1 red onion, sliced
4 oz. baby bella mushrooms, sliced
Salt and pepper to taste
1 (14 oz) cannellini beans, drained & rinsed
2 cups baby spinach, slightly chopped
1 tbsp hummus
2 tbsp balsamic vinegar
2 cloves garlic, minced
3 tbsp olive oil
Warm the olive oil over medium heat. Add the onion and cook 4-5 minutes, until soft.
Add the mushrooms, salt and pepper. Cook for 8-10 minutes, until the onions start to caramelize and the mushrooms brown.
In the meantime, make the dressing. Combine the hummus, vinegar and garlic. Slowly whisk in the oil.
Add the beans to the pan and stir to combine. Remove from heat.
In a large bowl, combine the spinach with the bean mixture and dressing. Toss well.
